Millets, curd, ghee, makhana, fermented foods and seasonal produce are being rediscovered through modern language such as gut health, clean eating and functional nutrition.

The funny part is that many families never really left these foods behind. What has changed is how younger consumers talk about them. Sometimes the healthiest trend is simply old wisdom coming back.

Packaged-food brands are increasingly building entire product lines around millets, A2 ghee and traditional fermented staples.
